The animal took the place of Adam and Eve but it was only temporary because the life of the animal is inferior to human life. Hence, the life of the animal could only buy Adam and Eve some time. They had to continue the practice of renewal from time to time.
The children continued the practice of renewal also. For Bible said in Genesis 4:3-4 NKJV
[3] And in the process of time it came to pass that Cain brought an offering... Abel also brought of the firstborn of his flock and of their fat. And the Lord respected Abel and his offering...
The practice continued to Noah. Noah live hundreds of years before the law of Moses, yet, He already knew the difference between clean and unclean animals. And when he came out from the ark, the first thing he did was sacrificed clean animals. The animals took their places.
So everytime the Bible said someone built an altar to God, know that something was sacrificed on that altar.
When we got to Genesis 12, we see the man Abraham was a man of altars and sacrifices.
So much so, when God asked Him to sacrifice Isaac, Isaac said; "where is the lamb for a burnt offering?"
Isaac too at the tender age already knew the drill.
And when the Father tied him instead of a lamb, Isaac did not struggle. That was the example of what the Father and Jesus did on the cross.
Jesus said, not my will but thy.
The practice continued to the days of Moses when it became law. It was codified.
However, it existed before the law.
Don't forget that the life of the animal is lesser in value to that of human but then the life of God is superior and an over payment for all humanity.
The blood of Jesus is a one time settlement over and beyond the price for the whole of humanity.
